I am not a vegan but, as a vegetarian, I do try and limit the animal products I consume by opting for vegan options as frequently as I can. Since the beginning of July I have also become more aware of my waste and have cut down on single-use and plastic products (I will do a separate post about this journey another time).

Anyway, since my last post with the banana bread recipe, I have played around with a vegan version. My son's Dad, Kris (who happens to be vegan) suggested I try soaked chia seeds to replace the eggs. This worked but, it changed the texture (more dense) and flavour (more nutty and less sweet) - needless to say, my seven year old was not a big fan! He then suggested I use bananas instead of egg but, since the recipe already asked for bananas, I was not sure if this would work... But, boy, did it work well! So, below is the new, improved, cruelty-free banana bread recipe which tastes EXACTLY like the original recipe!

𝗩𝗘𝗚𝗔𝗡 𝗕𝗮𝗻𝗮𝗻𝗮 𝗕𝗿𝗲𝗮𝗱
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴⠀⠀⠀⠀
• 125g Vegan Butter Alternative / Spread (I used Olé)
• 5 Bananas⠀
• 2 Cups of Flour⠀
• 1 Teaspoon Bicarbonate of Soda (mixed with 3 teaspoons hot water)⠀
• 1 Cup of Sugar⠀⠀⠀⠀
• 1 Teaspoon Baking Powder⠀⠀⠀⠀
• 0.25 Teaspoon Vanilla Essence⠀⠀⠀⠀
• Dash of Almond / Soy / Rice Milk (if needed)⠀⠀⠀⠀
⠀⠀⠀⠀
𝘚𝘵𝘦𝘱𝘴⠀⠀⠀⠀
• Cream vegan butter alternative and sugar.⠀
• Mash the bananas and add it to the mixture.⠀⠀⠀⠀
• Add vanilla essence.⠀⠀⠀⠀
• Fold baking powder and flour into the mixture.⠀
• Add bicarbonate of soda mixture and a little almond / soy / rice milk if it is needed to reach a dropping consistency.⠀⠀⠀⠀
• Line a bread pan with baking paper.⠀⠀⠀⠀
• Pour or spoon mixture into the pan.⠀⠀⠀
• Bake in a moderate oven for about one hour (depending on your oven).
